Our Piemonte Doc Cortese is made with grapes coming from two different vineyards, cordon-trained and spur-pruned, with a north-east exposure.
After the harvest, the grapes are immediately pressed and are left fermenting for four or five days with selected yeasts. Once the vinification is finished, the Cortese is aged exclusively in steel tanks. Our Cortese has orange blossom, grapefruit and banana scents, with a touch of freshly cut grass. It matches well with fish, but also with more sophisticated éntrées.
